We waited on the new PayPal module for long time, now we need to go live...
Is this new PayPal module ready for production?

We need some docs to help get it setup and accepting payments.

Also, does this now totally replace any need for Foxy?
Can the new PayPal module do everything Foxy used to do?

The Payment and Subscription modules, which support the PayPal gateway and jointly replace the FoxyCart module have been available in the beta release channel for some time now. They are both pretty stable so would suggest that they are ok to try on your site.

Just to be clear, its not the PayPal module that's in beta, but the Payments and Subscription modules.
There is no documentation for them as yet as they are not fully released, but their setup is very straightforward and intuitive. Its just a case of selecting the PayPal plugin in the Payments module, then entering your PayPal account email address and Merchant ID. Then configure the quotas, as you would any other module.

Just to confirm : Is this the right module we should install ? :

Correct, along with the Subscriptions 1.0.0b5 module, if you need that feature.

Version 1.0.8 by @the-jamroom-network
The Profile Stream Pay module allows you to "pay" a profile when a viewer streams a video or listens to an audio item on a profile. Configurable on a per quota and per item basis.
