What exactly is Shared - profile visible in search? Does that mean they see the whole profile if they find a user via search?

No - Just the profile name will show in the search results. If it is then clicked on they will be directed to the profile page but it will say something like "You must be a follower to view this profile" with the option to follow. Its then up to the user whether followers need to be approved.
