solved Nginx server setup

We'll soon be setting up our production server for our Jamroom site and our preferred set up would be to use Nginx as the webserver.

Has anyone got any recommendations on the best set up ?

Nginx should work, just know that we don't develop or test on Nginx at this time. I would recommend following best recommendations for running Nginx with PHP-FPM.
