I am using celebrity skin primarily for the fact it has a dark version which works best with my theme but to be honest it would be cool to play around with some other skins like follow me for instance, but the only thing keeping from it is the light skin. Some skins let you choose light or dark but some do not ?

Light and Dark options are just CSS changes. You are in full control of the CSS in any skin.

how easy would it be for me to change the color on follow me to match celebrity dark?

i was able to do it with the simple chat by taking the css code from another skin and adding it to the skin css and it made the chat dark but not sure about the rest
