Is it possible to change the 7 day payout to 3 days? Or add a 3 day option?

ACP -> eCommerce -> FoxyCart -> Global Config -> set "Payment Clears" to whatever you want.

Just checked on the options and yeah - there's only a few - we should be able to add some more in there.

A new range of payout times has been added to version 1.5.3 - check that out and see if that works for you.
