How can I delete old JR modules and only keep the last update ?

ACP=>Developer=>Developer Tools=>Tools=>Rebase Modules

Note that there is no real need to do this on a live site, its a 'developer' tool. Disk save saving is minimal.

What paul outlined is the way for development, what you're probably after is :
MODULES -> CORE -> MARKETPLACE -> GLOBAL CONFIG -> GENERAL SETTINGS -> MARKETPLACE VERSIONS

change it from KEEP ALL VERSIONS to 1 VERSION.

So when you update the older versions will be removed.
