Is there a way to change total # streams of a song?

By streaming them, that would change the #.

but I reckon you're wanting to fiddle with the number for some reason or other as the admin user, so the datastore count field you want to change is:
 audio_file_stream_count

There are a few ways to change it, either by the datastore browser:
ACP -> DEVELOPER TOOLS -> TOOLS -> DATABASE ADMIN

Or via the audio modules "Datastore Browser"
ACP -> PROFILES -> AUDIO -> TOOLS -> DATASTORE BROWSER

Or via the batch editor if that's installed.
