Once I save a biography on JR 5.1, when I try to edit again, Latin words with accents are all messed up.

Does it show correctly on the page, but then show incorrectly in the editor? Or do you mean AFTER you have edited and saved it it no longer shows correctly?

First time I add the text it shows fine, I save and it shows correctly in the profile, then if I edit, it doesn't show correct on the editor, and if I save it it shows all messed up as well in the profile.

Sounds like something might be messed up in the editor - you also are seeing issues with the URL links. Like in my other response, update to the latest JR 5.1.1 (it includes an update to the very latest Tiny MCE 3.5) and reset all caches, then see if that works.

After updating to JR 5.1.1, this is now showing/working correctly :).
